Mm Local Clam Linguine


Our good friend Ben Mustin runs a food business called Mm Local. Mm Local is an amazing local farm produce canning company. Their food tastes so good you can almost smell the garden. Tonight we decided to experiment with a recipe using MmLocal's Tomato/Basil sauce. Mark made up the recipe, and it was delicious. The recipe is below, and the photos are below that. Ingredients:
1 dozen fresh clams in shell
9 oz fresh linguini (can substitute d
ried)
1 jar Mmlocal tomatoes with Basil
1/2 teaspoon salt
Black pepper
3 large garlic cloves
2 baby bella mushrooms
1/4 cup fresh basil leaves cut into strips
1/4 cup olive oil
1/4 tablesp
oon butter
3 tablespoons red wine

Directions:
Preheat pan on medium high heat.
Add 1/4 teaspoon butter
1 clove chopped garlic and olive oil, and red wine


Steam clams in liquid until shells open
Remove clams (retain liquid in a separate container)
take clams out of shell and coarsely chop
Preheat large pan with rest of olive oil.
Add noodles to boiling water
Add mushrooms, salt, pep
per, remaini
ng garlic and 1/2 the b
asil.
Let cool
Add clam liquid slowly as mushrooms absorb it (about half the liquid)
Strain liquid from 1 jar Mm Local tomatoes, and coarsely chop.
Add noodles, tomatoes, clams to the pan and toss.
Let cool for 2 minutes, and add rest of basil, toss and serve with fresh parmesan cheese.
