MmLocal Chipotle Peach Salsa & Chicken Tacos

What a nice Sunday afternoon for making a beautiful dish to photograph.

Mm Local Peach Chipotle Salsa:

1 Jar MmLocal Peaches

4 Tbs. Chipotle Peppers in Adobe Sauce

4 Tbs. Cilantro, Chopped

Process:

Combine Ingredients in food processor. Salt to taste.

Chicken Glaze:

1/4 cup Peach Juice from MmLocal peaches (above)

1/4 cup MmLocal Peaches, Mashed

3 Tsp. Chipotle Peppers in Adobe Sauce

3 Tsp. Red Wine Vinegar

1 Tbs. Chopped Cilantro

Process:

Combine ingredients in a bowl. Spread on chicken with a basting brush. Baste 1-2 additional times while grilling.

Chop red cabbage and cilantro. Warm corn or flour tortillas in the oven. Combine chicken, MmLocal Chipotle Peach Salsa, cabbage and cilantro on a tortilla. Finish with fresh lime juice, and serve.
